Rice casserole with chicken and broccoli
ingredients for 4 servings:
a glass of long grain rice
2 tablespoons of olive oil
1 small broccoli
1 chicken breast
50g grated cheese
spices: salt, pepper, nutmeg
Rinse the rice in cold water, fry for about a minute on a tablespoon of hot oil, pour 300 ml of water, salt, bring to a boil. We reduce the heat, cover with a lid and cook for about 10 minutes, turn off the plate, leave the pot with rice on a warm plate for 10 minutes.
We divide broccoli into smaller florets, boil in salted water for about 2 minutes, drain and pour cold water. Boil chicken breast in broth, cut into cubes after cooling.
Mix the cream, eggs and cheese together, season with salt, pepper and a scoop.
Mix rice with broccoli, chicken and half the sauce, put into an ovenproof dish. Top the remaining sauce. Bake at 180 degrees for browning (about 20 minutes).
